Sift together:

1 cup sifted all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. soda
3/4 cup sugar
1/4 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. vanilla

Add:

1 cup persimmon pulp
2 beaten eggs
1 cup milk
1/2 tsp. grated lemon rind
2 T. melted butter (margarine)

Mix well. Turn into well-greased and lightly floured baking dish. Bake at 350 degrees for 50 minutes, or until pudding is done. Serve in squares, warm, with whipped cream or ice cream, hard sauce or lemon sauce (Petunia's favorite is Vanilla Bean Ice Cream...).

Makes 6 servings :-)
