RedBird Café's ~ Hot Heavenly Paw-Paw Soup (for 4)
You'll need:
In medium to large saucepan, over medium high flame melt butter,
adding minced garlic and basil; stir, being careful not tolet garlic pop
and splatter. Add wine, stirring. Add tomato sauce and water, then tomato
soup and cayenne. Reduce heat to medium, and bring to boil. As mixture
begins to boil add milk, stirring. When this begins to boil, add peanut
butter and reduce heat to low. Use wire whip to dissolve peanut butter
as mixture slowy boils. Simmer until mixture is thickened. Add more milk,
if too thick. Turn off heat and serve immediately, sprinkled with cheese.
*Suggestion: you may garnish soup with celery sticks, or serve with goat cheese and whole grain crackers!
