RedBird Café's ~ Hot Heavenly Paw-Paw Soup (for 4)


  • 1 10 oz. can (Campbell's is best) plain Tomato Soup
  • 1 15 oz. can Tomato Sauce (you can add more later if you think it's not tomato-y enough)
  • 2 Tbsp. butter
  • 1/2 tsp. minced garlic
  • 1/2 - 1 tsp. dried basil (per your taste)
  • 1/4 tsp. cayenne pepper
  • 1/4 cup red wine (or Welch's grape juice)
  • 6 oz. water
  • 10 oz. skim milk
  • 2 HEAPING Tbsp. crunchy peanut butter (Smuckers is best)
  • about 1 cup grated cheddar or cheddar mix cheese

  • You'll need:

  • medium to large saucepan
  • soup ladel
  • wire whip
  • measuring cup
  • measuring spoons

  • In medium to large saucepan, over medium high flame melt butter, adding minced garlic and basil; stir, being careful not tolet garlic pop and splatter. Add wine, stirring. Add tomato sauce and water, then tomato soup and cayenne. Reduce heat to medium, and bring to boil. As mixture begins to boil add milk, stirring. When this begins to boil, add peanut butter and reduce heat to low. Use wire whip to dissolve peanut butter as mixture slowy boils. Simmer until mixture is thickened. Add more milk, if too thick. Turn off heat and serve immediately, sprinkled with cheese.

    *Suggestion: you may garnish soup with celery sticks, or serve with goat cheese and whole grain crackers!
