Pat Barrett's ~ Pumpkin Delight

(This is another YUMMY recipe shared with us by my sweet neighbor, Sue Windhager!)

  • 16 oz can of pumpkin
  • 1/2 teaspoon nutmeg
  • 4 eggs, slightly beaten
  • 1 box yellow cake mix.
  • 12 oz can evaporated milk
  • 1 cup margarine, melted
  • 1 1/2 cups granulated sugar
  • 1 cup chopped nuts (pecans, walnuts, etc)
  • 2 teaspoons cinnamon 1 teaspoon ginger
  • In large mixing bowl, combine pumpkin, eggs, milk, sugar, and spices; stir until well mixed.
    Pour into lightly greased (can be sprayed with non-stick cooking spray) 9 x 13 inch baking dish or pan.
    Sprinkle dry cake mix over top of pumpkin mixture, then pour melted butter or margarine over mixture and sprinkle nuts on top.

    Bake in a 350 degree oven for 1 hour. Serves 8-10.
